THE BEST CHICKEN MEATBALL PARMESAN PASTA

This delicious pasta was a random dish I came up with using some extra ingredients I had in the house. I also just bought a cast iron pan and was eager to create something I could use it with. Since making this dish, the whole family has asked for it repeatedly, and I feel like I could make it with my eyes closed. Super easy to make and under 40 minutes with prep and cook time, this dish will be a big hit at your next dinner.

Chicken Meatball Parmesan Pasta

Ingredients:

  • 1 lb/package ground chicken or ground turkey

  • 1 jar of your favourite pasta sauce (I love vegetable medley or tomato basil)

  • 1 small can or 1/2 cup tomato paste

  • 1/3 cup bread crumbs (I used gluten free)

  • 1 egg

  • 2 garlic cloves, minced

  • 1/3 cup Parmesan cheese

  • spices, 1/2 tsp of each - garlic powder, thyme, oregano, black pepper, salt

  • 1 tsp Mrs.Dash original seasoning

  • 1 package of your favourite pasta

  • additional parmesan and shredded marble cheese to put on top at the end

Instructions:

  1. Preheat oven to 400F

  2. Grease cast iron pan or baking dish with 1 tsp of olive oil

  3. Pour 1 jar of pasta sauce and tomato paste into your cast iron pan or baking dish and mix well

  4. In a mixing bowl combine ground chicken or turkey, egg, garlic, parmesan, spices and breadcrumbs until well combined

  5. Form meat mixture into meatballs, I like doing 6-8 large meatballs but you can also make them smaller into 10-15

  6. Place meatballs into pasta sauce in cast iron pan or dish and place in the oven and bake for 30 minutes

  7. Once your timer is up take your dish out of the oven and sprinkle with additional parmesan cheese and marble cheese (about 1/3 cup)

  8. Place the dish back into the oven and broil for 5 mins on high or 8 on low

  9. Take out and serve with cooked pasta and serve with your favourite side like pita bread or garlic toast!

  10. Destroy and Enjoy
