Sweet Chili Chicken


Who else has a love for Sweet Chili Chicken? - With breaded coconut gluten free chicken this delicious dinner was not as quick and easy as most but it was worth the time and effort put into it. - Sweet Chili Chicken - INGREDIENTS: • 4 chicken breasts, cut up into 1 inch cubes Batter: • 1 egg • 1/3 cup coconut flour • 1/4 cup corn starch or arrowroot starch • 1/2 cup almond milk • 1/2 tsp paprika + 1/2 tsp chili powder Sauce: • 1/2 cup pure maple syrup or honey (I’ve done both) • 1/4 cup water • 2 tbsp white or rice vinegar • 1 tbsp cornstarch • 1 small garlic clove, grated • 1 tsp salt • 1/2 tsp red chili pepper flakes - INSTRUCTIONS: Chicken Batter 1. Heat up skillet with 2 tbsp coconut oil to med high heat 2. After combining all the batter ingredients add chicken cubes to it and make sure they are all evenly coated. If batter is too thick add a little bit of water to thin is out. 3. Fry chicken cubes in coconut oil until golden brown. 4. Take out and let sit on a plate with paper towel to absorb any left over oil. 5. Combine all sauce ingredients in a small pot and bring to a boil, once boiling turn heat to low and allow to simmer for 5 to 7 mins. 6. Once sauce is thick add it to a large sauce pan and add chicken. 7. Stir and coat the chicken with sauce and toss in cut up scallions and sesame seeds. 8.
