Lemon Coconut Chia Seed Muffins

The perfect sweet snack to have after the holidays. These muffins are light, fluffy and incredibly moist. They are subtly sweet and sure to satisfy everyone in the household!


 

These all started because I had some extra lemons to use up and was craving something sweet yet refreshing that would also comfort the palate. I saw a picture of some lemon poppy seed bread and my mind started racing with ideas. These muffins were so easy to make and if you bake gluten free often you will most likely have all the ingredients you need to make these.


I didn't have poppy seeds but had chia seeds which in my opinion are even better! These little bites of heaven are packed with omegas from the chia seeds, protein from the almonds, healthy fats from the coconut oil, fibre from the coconut flakes and of course vitamin C and potassium from the lemons. So don't shy away from these next time your craving something sweet, refreshing and comforting!


 

Lemon Coconut Chia Seed Muffins

INGREDIENTS:

- 2 3/4 cups almond flour

- 1/4 cup tapioca flour or arrowroot startch

- 2 tbsp chia seeds

- 1/4 cup unsweetened coconut flakes

- 1/2 tsp baking soda

- 1/4 tsp baking powder

- dash of salt

- zest from 1 large lemon

- 1/3 cup honey or pure maple syrup

- 1/4 cup monkfruit sweetener or coconut sugar

- 1/3 cup coconut oil, melted

- 1/4 cup lemon juice, freshly squeezed

- 1 tsp vanilla extract

- 3 eggs


INSTRUCTIONS:

  1. Preheat oven to 350F and grease silicone or tin muffin trays

  2. In a medium bowl combine all dry ingredients plus lemon zest and place to the side

  3. In a large bowl combine all wet ingredients, whisking until well combined.

  4. Add dry ingredients to wet ingredients and mix until well combined.

  5. Evenly distribute batter into muffin trays.

  6. Bake muffins for 15-17 mins or until a toothpick comes out clean.

  7. Allow to cool in pan for 5 mins then transfer to baking sheet to finish cooling.

  8. ENJOY!


 

My little guy and I enjoyed these cut in half with some cashew butter and they were DELICIOUS! I made them 2 days ago and there is only 2 left.. so that can tell you how my fam felt about them.
