These portable egg bites are so delicious and easy to make. Packed with protein they will be the perfect start to your morning or a good pick me up snack mid-day. The best thing is how versatile these little bites are, you can pick a number of different ingredients to throw in them so you never get bored of the flavour. EASY EGG BITES
6 large eggs
4 egg whites
1 tbsp olive oil
1 tbsp mrs dash or seasoning of choice
4 cups chopped veggies or add ins ex: chopped spinach, bell peppers, mushrooms, broccoli, ham, bacon, onion, feta, cheddar.. the list goes on.
Me favourite are these 3 combos:
1. spinach, mushroom, onion with cheese
2. Broccoli, ham, red pepper, cheese
3. Tomato, feta, bacon
Preheat oven to 350F
Lightly grease silicone or tin muffin trays (Kiddo Feedo makes the best trays for these)
Place add in combos of choice into greased tray. Filling it about half way up.
In a large measuring cup or bowl whisk egg together with oil until smooth then add seasoning
Pour beaten egg mixture over add ins in each muffin cups filling it to 3/4 to the top
Bake for 20-25 mins until the egg bites are set. Let cool in tray for about 5 mins then remove from tray and allow to cool on a baking rack
Enjoy immediately or once cooled place in a air tight container and store in the fridge for up to 5 days or freezer for up to a month
